Masala bhindi is a mildly spiced, chutputah okra/bhindi curry which goes well with all kinds of Indian breads like roti/fulka/parathas etc. Stir fried okras are added to a potato. onion based curry laced with Indian spices and crunchy tomato and onion petals are added later to bring out the contrast in texture. Easy and quick to prepare, this is popular throughout India with subtle variations. Happy cooking!
Ingredients:
- Oil - 4 tbsp
- Kasuri methi- 1 tsp
- Cumin powder - 1/2 tsp
- Chopped tomato- 1 large tomato
- Potato- 2 medium size
- Onion petals - 1 medium
- Chopped onion - 1 large onion
- Diced tomato - 1 medium
- Turmeric powder - 1/4 th tsp
- Bhindi/okra - 300 gms
- Ginger garlic paste - 1/2 tsp
- Red chilli powder - 1/2 tsp
- Cumin seeds - 1/2 tsp
- Coriander powder - 1/2 tsp
- Salt as per taste
- Garam masala powder - 1/4 th tsp
- Dry red chilli - 2 pcs
