The most common type of Bengali shukto recipe now prevalent in these parts involves the use of vegetables like drumsticks, brinjal and green plantains or raw banana and the bitter gourd provides the quintessential bitterness. Ingredients:
- Ginger paste- 1 tsp
- Mustard paste - 1/2 tsp
- Panch foron - 1 tsp
- Mustard oil - 6-7 tbsp
- Ghee - 1 tbsp
- Milk - 1 cup
- Maida - 1 tsp
- Bitter gourd - 1 medium
- Potato - 1 medium (Cut lengthwise)
- Raw papaya - 1/2 portion of medium papaya
- Bringal - 1 medium (cut lengthwise)
- Panchforon powder- 1 tbsp
- Radhuni paste - 1/2 tsp
- Sugar - 2 tsp
- Bay leaves - 2
- Banana stem - 6 inch cut into half circle
- salt as per taste
- Sweet potato - 1 medium (Cut lengthwise)
- Drumstick - 2 pieces
