Potol or parwal is a seasonal veggie available during the summers in India. It has high water content and thus has a cooling effect. Posto or poppy seeds have their pride of place in Bengali kitchens and is widely used as the dominant spice in a host of veg and non-veg dishes. The combination of these 2 is a very tasty and prevalent dish that is both acclaimed for its taste as well as intrinsic cooling qualities. Ingredients:
- whole green chillies - 4 pcs
- mustard oil - 3 tbsp
- Potol (washed, peeled and slited both ends) - 300 gms
- Chopped coriander leaves - 3-4 tbsp
- sugar - 1 and 1/2 tsp
- Posto/ poppy seeds - 3 tbsp
- Kalonji - 1 tsp
- turmeric powder - 1 tsp
- salt as per taste
- Garlic - 1 clove
