GREEN SPLIT PEA SOUP:

  • 1/4 teaspoon black pepper
  • 6-8 cups water
  • 1/2 teaspoon salt
  • 1 cup onions, chopped
  • 1 lb. dry Green Split Peas, sorted & rinsed in a sieve
  • 1/2 cup carrots, chopped
  • 1/4 teaspoon garlic powder
  1. In a 6 to 8 quart dutch-over or heavy pot, over medium-high heat, add water, peas, onion, carrots & seasoning. Bring to a boil. Stir.
  2. Reduce heat to, medium-low, cook (with vented lid) for 25-45 minutes until peas are tender; stirring occasionally.

Top with sour cream & croutons, if desired.
