Mix Veg Spinach Soup | Spinach Soup | Low Calorie Spinach Soup

Mix veg spinach soup

Ingredients:

  • Spinach/Palak 1 bunch
  • Mint leaves 1 tbs
  • Lemon juice 1 tbs
  • Ginger paste 1 tbs
  • Sugar 1/2 tbs
  • Cloves 2-3
  • Salt and Black pepper
  • Cumin/Jeera 1 tbs
  • Ghee 1 tbs
  • Tomato 1 med sized
  • Corriander leaves 1 tbs
  • Carrots 1 med sized
  • Curry leaves
  • Bottlegourd/Dudhi 1cup
  • Eggplant/Brinjal 1 medium sized

Procedure:

  1. Add palak/spinach leaves into boiling water and boil for 3-4 minutes
  2. Remove boiled spinach leaves from water and store that palak water for later use
  3. Add a dash of water to palak leaves and blend it to the smooth puree
  4. Keep it aside. Take a pressure cooker and add a glass of water to it
  5. Add all chopped veggies and cover it with lid
  6. Wait till 3 whistles and after that mach all the boiled veggies
  7. Transfer the mixture to another bowl and add spinach/palak puree into it and add remaining water of boiled spinach into it
  8. While soup is boiling prepare a paste of mint leaves, coriander leaves and ginger and add it to the soup
  9. Add salt, black pepper and sugar into it
  10. For tadka, add ghee, cumin/jeera, cloves and curry leaves and add tadka into the soup
  11. Finally squeeze half lemon and soup is ready to serve
