It is unusual to club bhindi/okra and chutney in the same recipe. This is a near-extinct family recipe handed down the generations and is used an an accompaniment for main meals during hot summers. Ingredients like panch phoran, tamarind pulp and sambar masala create a unique blend of South Indian and Bengali flavours. It has a cooling effect on your palette and helps in digestion. Ingredients:

  • Tamarind pulp - 5-6 tbsp
  • Sugar - 6-7 tbsp
  • Panch phoran/ five spice mix - 1/2 tsp
  • Chopped garlic- 1 tsp
  • Sambar masala - 2 tbsp
  • Dried red chillies - 2
  • Turmeric powder - 1 tsp
  • Finely chopped onion - 1 medium size
  • Curry Leaves - 10-15
  • Salt according to your taste.
  • grated ginger - 1 tsp
  • Bhindi/Okra/Dharosh - 100gms cut into pieces.
  • Mustard oil - 2 tbsp
