FRENCH LENTIL SOUP
In a heavy large sauce pan over medium heat add...
- 1/2 cup carrots, chopped
- 2 Tablespoons extra-virgin olive oil
- 1 cup onions, chopped
- 1/2 cup celery, chopped
- 1 garlic clove, minced
Saute these ingredients for about 15 minutes or until vegetable begin to brown.
- 2 cups water
- 2/3 cup lentils, rinsed and drained
- 1 cup tomatoes diced in juice
Bring to a boil. Reduce heat to medium-low, cover with lid, and cook until lentils are tender. About 35-40 minutes.
Transter 1 cup of lentils to blender and puree. Add back to lentil soup. Add more water to thin soup out if too thick. Season with coaser salt and fresh cracked pepper.
Garnish and serve.
