Mini Fruit Meringues - Perfect for Parties!
Simple to make and very impressive!
You can make the meringues a few days in advance and store in an air tight container.
To make the meringue:
- 4 medium/large egg whites at room temperature
- 225g Caster (superfine) sugar
Topping:
- 75g blueberries
- Fruit coolie/curd - around 1 tablespoon per meringue
- 1/2 Mango (cubed)
- 150ml double cream - whipped (up to 10 small meringues)
Consume within 24 hours once you have decorated the meringues.
Store in the fridge, covered and away from strong smells
Enjoy your meal!
