Kul or jujube is widely available in Bengal in the later half of the winter seasoon. Kuler achar/jujube pickle becomes an integral part of our meals and is used as a accompanying relish or a palette cleanser after the meal. This is sweetish, tangy and aromatic. Surprise our friends and family with this traditional achar !
Ingredients:
- Mustard seeds - 1/2 tsp
- Fennel seeds - 1 tbsp
- Akher gur / jaggery - 400 gms
- Cumin seeds - 1 tbsp
- pinch of salt
- Dried red chilli - 3-4
- Fenegreek seeds - 1 tsp
- Topa kul/ boroi - 250 gms
- kashmiri red chilli powder - 1 tsp
- Coriander seeds- 1 tbsp
