Easy Mini Fruit Tartlets - Easy Filling Recipe - Simple and Delicious!

This is a really easy desert with the WOW factor. Perfect for those who like a light desert and great for those who like to be able to adjust the sweetness in a recipe, you will find this easy and delicious.

To make this SUPER QUICK, EASY & SIMPLE, use pre-made pastry shells instead of making your own. You can put this together with pre-made pastry shells in just 10 minutes!

If you want to make your own pastry but know you won't have time on the day, make it in advance and freeze it. It'll thaw in just a few hours and is ready to roll.

INGREDIENTS (to make and fill) 12-14 tartlets):

PASTRY:

  • 9oz plain (all purpose) flour,
  • 5oz butter,
  • 2.5oz caster (superfine) sugar,
  • tablespoon milk.*just put all the ingredients in a food processor and blitz for 1 minute until it just comes together - bake at 160 degrees for 10-15 minutes*

FILLING:

  • 50g cream cheese,
  • 60ml double cream (I was using Elmlea which is a long life cream) and 2oz icing (confectioners/powdered) sugar,
  • flavouring of your choice

FRUIT:

I used blueberries, strawberries and blackberries (use what's in season and to your taste. Quantity depends on design you choose.

IMPORTANT note about my pastry - In this video I doubled the quantity of pastry that I made so that's why I halved it before rolling it out. To make around 12-14 pastry tartlets in my bun tins, I would make one quantity of pastry (9oz flour, 5oz butter, 2.5oz sugar). If you double the recipe, you will be able to make 24-28 tartlets.
