Easy Mango Trifle

This is a really simple mango trifle with meringue and passion fruit.

It's really easy to make and you can use as much or as little of each ingredient as you like!

I used for one small trifle (serves 2):

• Vanilla cake
• Half a Mango
• 4 tablespoons mango & passion fruit coolie
• A handful of small meringue pieces
• 4 tablespoons lemon curd
• 150ml whipped double cream

Tips:

• Once made, keep refrigerated
• Make no more than 12 hours in advance
• You can substitute Greek yoghurt or a thick custard for cream
• You could use a lime curd instead of lemon curd
• You can use any flavour cake - sponge or pound cake can work well
