CARAMEL APPLES

4 Apples, cleaned under fresh running tap water, stems removed, & dried with paper towels

4 Wooden sticks

Insert a wooden stick into the center of each apple. Set Aside.

  • 1/2 cup (1 stick / 8 tablespoons) butter
  • 1 cup lightly packed brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup corn syrup
  • 1/4 cup, plus 1 tablespoon sweetened condensed milk
  1. In a heavy bottom sauce pan, over medium-high heat, add butter, sugar, corn syrup, and sweetened condensed milk. Stir until mixture beings to boil. Turn down to medium-heat.
  2. Immediately, add a candy thermometer to side of pan. Continue to stir until candy thermometer reaches 245 degrees F. Remove off heat. Take out candy thermometer. Stir in vanilla. Continue to stir for 2-3 minutes.
  3. Roll each apple into the caramel sauce until well coated. Allow excess caramel to drip off each apple. Gently roll apples in your favorite chopped nuts.
  4. Add apples to well buttered surface. Rest for 3-4 hours.

TIPS: Store apples in an airtight container, refrigerate, for up to 1 week. Add leftover nuts to leftover caramel. Stir well. Add to a well buttered surface until caramel is firm. Cut into desired shapes. Wrap in parchment paper & store in plastic bag up to 1 week.
