Old-Fashioned BLUEBERRY DUMPLINGS!! Use Fresh or Frozen BLUEBERRIES!! Recipe below...
BLUEBERRY DUMPLINGS
Preheat oven to 400 degrees F.
Lightly grease 10" by 7" baking dish. Set aside.
- 2 tablespoon granulated sugar
- 2 teaspoon baking powder
- 2 tablespoon chilled butter, cubed
- 1/2 cup 2% or whole milk
- 4 cups fresh or frozen BLUEBERRIES
- 1/2 teaspoon salt
- 1/2 cup water
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice or juice of 1 whole lemon
- In a 2-quart sauce pan, over high-heat, add blueberries, water, sugar, and lemon juice. Bring to a boil. Reduce heat to simmer for 9-11 minutes. Stirring occasionally.
- In a bowl add flour, salt, baking powder, and sugar. Whisk for 15 seconds. Cut chilled butter into flour mixture. Add milk. Gently stir until dry ingredients can no longer be seen.
- Add hot blueberry mixture into prepared baking dish.
- Add dumpling dough, by tablespoon, on hot of hot blueberries.
- Bake on the middle rack for 20-25 minutes or until blueberries a bubbly and dumplings are golden in color.
