BAKED APPLE & CINNAMON ALMOND CRUMBLE

Ingredients:
Apples:
- 1/3 cup Caster Sugar
- 1 Vanilla Bean, split lengthways, seeds scraped, bean reserved
- 1 tsp Lemon Juice
- 5 large (or 6 small-medium) Granny Smith Apples, peeled, cored, each cut into 8 wedges
Crumble:
- 100 g Chilled Unsalted Butter, cut into small pieces
- Vanilla Ice-cream or Whipped Cream, to serve
- 1 pinch Salt
- 1/2 tsp Ground Cinnamon
- 3/4 cup Flaked Almonds
- 3/4 cup Plain Flour
- 1/2 cup Rolled Oats
- 1/2 cup Caster Sugar
Method:
- For the Apples - Preheat oven to 180°C or 160°C fan.
- Mix apples, vanilla seeds, reserved bean and sugar together in a 2-litre, square baking dish. Set aside.
- For the Crumble Topping - Mix almonds, flour, sugar, oats, cinnamon and salt in a medium bowl.
- Rub butter into flour mixture until combined and mixture is quite clumpy. Sprinkle mixture evenly over apples. Squeeze over lemon juice.
- Bake for 50-55 mins, or until apples are tender, juices bubble and crumble is golden brown. Stand for 10 mins to cool slightly before serving.
