HUMMUS:
- 1/2 teaspoon cumin, optional
- 1/4 teaspoon kosher salt, optional
- 2 tablespoons olive oil
- 3 garlic cloves, can use more or less cloves
- 1/3 cup Sesame Tahini Paste
- 2 tablespoons water, more or less depending on smoothness of hummus desired
- 1/3 cup fresh lemon juice
- 1 (15-oz) can Chick Peas, drained & rinsed
- Wrap garlic cloves & 1 tablespoon of olive oil in a 12" by12" piece of tin foil. Bake in 400 degree pre-heated oven for 30 minutes.
- Add tahini paste & lemon juice into a food processer. Process, on high, for 1 minute. Remove lid & scrape down sides with rubber spatula. Process an additional 1 minute.
- Add roasted garlic cloves, olive oil, cumin & salt to tahini mixture. Process 1 minute. Scrape down sides.
- Add half the chick peas to tahini mixture, process 2 minutes. Scrape down sides. Add the remaining chick peas. Process an additional 2 minutes.
- Hummus will be thick in texture. To thin hummus mixture...slowly add 1 to 3 tablespoons of water, while food process is running, to get the desired smoothness.
TIPS: Garish with olive oil, flat leaf parsley & paprika if desired. Store in an airtight contained, in refrigerator up to 3 days.
