BUTTERSCOTCH SAUCE:
- 1 1/2 cups firmly packed light brown sugar
- 1/2 cup butter
- 2 teaspoons pure vanilla extract
- 3/4 cup whipping cream
- Cook brown sugar and butter together in a large heavy saucepan or skillet over medium heat, stirring constantly, 3-4 minutes or until butter has melted and mixture is smooth.
- Gradually stir in 3/4 cup whipping cream. Bring sugar, butter and whipping cream to a boil, stirring constantly; boil, stirring constantly, 3 minutes (use your timer).
- Remove from heat. Immediately, stir in vanilla. Cool 20 minutes. Store in a pint mason jar or another airtight container.
Makes: about 2 cups.
