BUTTERSCOTCH SAUCE:

  • 1 1/2 cups firmly packed light brown sugar
  • 1/2 cup butter
  • 2 teaspoons pure vanilla extract
  • 3/4 cup whipping cream
  1. Cook brown sugar and butter together in a large heavy saucepan or skillet over medium heat, stirring constantly, 3-4 minutes or until butter has melted and mixture is smooth.
  2. Gradually stir in 3/4 cup whipping cream. Bring sugar, butter and whipping cream to a boil, stirring constantly; boil, stirring constantly, 3 minutes (use your timer).
  3. Remove from heat. Immediately, stir in vanilla. Cool 20 minutes. Store in a pint mason jar or another airtight container.

Makes: about 2 cups.
