MUSHROOM SAUCE:

  • 1 cup chicken broth
  • 2 teaspoons cornstarch
  • 2 cups sliced mushrooms
  • 2 Tablespoons butter or margarine
  • fresh cracked pepper to taste
  • 1 tablespoon shallots, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried parsley
  1. Melt butter or margarine in a medium size skillet or sauce pan on medium heat. Add sliced mushrooms and shallots.
  2. Dissolve cornstarch in small amount of water. Add to chicken broth. Gradually add broth to mushrooms mixture and continue to stir and cook until thickened. Add salt, parsley and pepper to taste.
  3. Spoon over baked or sauté chicken breasts with rice or mash potatoes and green vegetable.

TIPS: Make 1 day ahead and store in an airtight container in refrigerator. Warm sauce on medium low heat before serving.
