First of all, a healthy new year to you, with great surprises, many happy moments and many delicious delights. I hope you all had a nice holiday season and started well into the new year.
Since we certainly have enough of roast meat, cookies and stollen over the holidays, we start with a simple salad.
As you read the headline, you surely came up with the following question:
“What is Canihua?”
A very legitimate question. I did not know the answer until two weeks ago. Canihua (pronounced kaniwa) is often referred to as baby quinoa. However, these are two different plants. This seed, like Quinoa and Ameranth, comes from the Andes and is slowly finding its way into our latitudes. I have this Canihua e.g. bought at dm, also in the organic store or “target =” _ blank “rel =” noopener noreferrer “> Internet* it is available.
Canihua is full of great nutrients, iron, protein and much more. It's just like quinoa a real power seed. The taste is slightly nutty. Some also describe it as chocolaty. I could not tell from cooked canihua, but maybe the chocolate flavor will come out better if it is prepared differently.
Cooked in salted water and then used as a side dish or salad
Like corn popped in the pan and then eaten in cereal.
Ground and then processed into bread or porridge.
Canihua salad – a delicious treat
Shortly before Christmas we had an appointment with our friends for a cooking class. On the program was a 4-course menu. As a starter there was just this salad: Canihua salad with Raddichio and pomegranate. For us (Maik and me), the starter was the highlight of the cooking class. And the best part, the salad is very simple in the preparation.
New Year's Eve, we have again swung the wooden spoon and prepared this delicious salad. The salad itself consists of only three ingredients: canihua, radicchio and pomegranate plus a honey mustard dressing. We have added some orange juice to the dressing so that the salad gets some moisture.
What is the easiest way to gut a pomegranate?
Now I'll tell you how to seed a pomegranate the fastest. For this you fill a large bowl with lukewarm water (so that the hands do not get cold;) halve the pomegranate and take it apart under water. This works much better in the water, because you do not run the risk that the red juice squirts everywhere.
I hope you already know the trick, because it saves you a lot of time and mud. 😉

Canihua salad with radicchio and pomegranate
Canihua salad with radicchio and pomegranate is a simple salad that is super healthy, filling and tasting delicious.
Cooking time:15 minutes
Total time:35 minutes
150 g Canihua
4 EL balsamic (light or dark)
8th Tablespoons olive oil
2 TL mustard
2 TL honey
50 ml orange juice (optional)
a handful of lamb's lettuce (optional)
Cook the canihua in 450 ml of water with a little salt for about 15 minutes until the water is gone and the grains are firm.
After the canihua is done, let it cool down.
Meanwhile, you wash the radicchio (preferably in a salad spinner) and cut it into thin strips.
Halve the pomegranate and gut it in a bowl of water. (See tip at the top of the text).
Now you mix the balsamic, olive oil, mustard, honey, optional orange juice and salt and pepper to a dressing.
Mix the canihua, the radicchio and the pomegranate with the dressing and stir well with each other.
Optionally you can serve some corn salad. Cleaned this and drizzled him with the dressing for the salad.
