The traditional Bengali *Moong Potol* or fresh, succulent potol/parwal cooked in moong dal flavoured with Bengali spices, ghee and raisins - make for the perfect thick, rich and royally flavoued dal preparation. This goes well with steamed rice. Not a very common dish- a must try for all Bong households or anyone who loves a good rice-dal combo. Ingredients:

  • Moong dal - 200 gms
  • Turmeric powder - 1/2 tsp
  • Salt as per taste
  • Ghee - 1 tsp
  • red chilli powder - 1/2 tsp
  • cumin seeds - 1/2 tsp
  • Garam masala powder - 1/4 th tsp
  • Grated coconut - 3 tbsp
  • Potol/Pointed gourd - 250 gms
  • Dry red chilli - 2
  • sugar - 3 tsp
  • Whole green chillies - 2
  • Mustard oil - 3-4 tbsp
  • Cumin powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Bay leaf - 1
