Fresh cauliflowers are available during winters in India. This becomes an integral part of Bengali cuisine during this season and is used across various recipes- noth veg and non veg. The florets are mainly used for cooking and the stalks are mostly thrown away. Here, I have showcased a delicious and delicately flavoured cauliflower stalk curry of * Fulkopir Data Chorchori* using cauliflower stalks with potatoes in a thick mustard gravy and spiced mildly.

Ingredients:

  • Slit green chillies - 3
  • Black mustard - 2 tbsp
  • Cauliflower stalks - 2 medium sized cauliflower
  • White mustard - 1 tbsp
  • Turmeric powder - 1/2 tsp
  • Chopped coriander leaves - 3 tbsp
  • Panch foron - 1/4 th tsp
  • mustard oil - 3 tsp
  • Garlic cloves - 2
  • Potatoes - 2 medium size
