Gobi Rezala is an improvisation of infusing Cauliflower with nawabi rezala. It is often contused that the origins of the dish is in the kitchens of the nawabs of Bengal and Bangladesh. The delicate flavors of the rezala compliments the aroma from cooked cauliflower to create dish unique in taste and culinary style.
Ingredients:
- Curd- 1 cup
- 1-2 cinamon sticks
- Cauliflower- Cut into medium size florets
- Garam masala powder - 1 tsp
- Poppy seed paste - 2 tbsp
- Ghee/clarified butter- 2 tbsp
- Cashew nut paste - 14-15 cashew nut soaked 2 hrs into water/milk then make a thin paste.
- Cumin powder - 1 tsp
- Refined oil- 2 tbsp
- 2 dried red chilli
- Whole garam masala - 1 bay leaf
- Onion Paste- 4 tbsp
- Kewra water- 1 tsp
- 3-4 cardamoms
- Sugar - 1 tsp
- 3-4 pepper corns
- 3 cloves
- Ginger garlic paste - 1 tbsp
- Salt according to your taste
