Bengali tomato chutney is a very common and easy to prepare recipe. Bengalis usually serve it after the meal is over with some fried papad.
Ingredients:
- Panch phoran masala -- 2 tsp
- Mustard oil -- 1 Tbsp
- Lemon juice -- 1 tsp
- Raisin -- soaked 2 hrs
- salt to taste.
- Cashew nuts
- Panch Phoran-- 1 tsp
- Tomato-- 3 medium size (dice)
- Sugar-- 1/2 cup
- Dates (Chopped)-- 2 tbsp
Method:
- Heat the pan with 1 tbsp oil.
- Add 1 tsp of panch phoron.Let them crackle and fry till it change
- colour.
- Now add diced tomatoes. saute for a few seconds.
- Add salt and cook for 2-3 minutes till the pulp becomes mushy and soft.
- Now add 1/2 tsp of tumeric powder and mix well.
- Next add sliced dates and cook for 2-3 minutes on medium flame.
- At this stage add 1/4 cup of water.Cook till everything is
- incorporated.
- Now add 1/2 cup of sugar
- Soaked raisins
- cashew nuts.
- Cover it and cook for few minutes.
- Now add 1 tsp of lemon juice.
- 2 tbsp of panch phoran masala and mix them well.
- Turn off the flame and cover it for few minutes.
- Let it cool and then serve.
