Begun pora is the Bengali rustic version of the North Indian baigan bharta. It involves roating the eggplant and tomato on open fire and then mash it using a bit of oil, seasoning and herbs. This is a purely authentic Bong dish and goes well with rotis/chapatis/ steamed rice. Happy roating. Be careful though!
Ingredients:
- Chopped onion - 1 medium
- Tomato - 1 large
- Brinjal - 1 large
- Salt as per taste
- Chopped green chillies - 2 tbsp
- Mustard oil - 1.5 tbsp
- Chopped coriander leaves - 2 tbsp
