Chingri malaikari or Prawn Malai Curry is an eternal Bengali favourite for all occasions.Fresh galda/king prawns cooked in a creamy coconut milk based gravy tempered with delicate Indian spices and green chillies will set your taste buds tingling. The concept of using coconut milk in Bengali cooking came from Malaysia and hence the name Malai Curry. This is a dish widely prepared for all Bong social ocassions including the celebration of Bengali New Year's Day i.e. Poila Boishakh. Ingredients:

  • cinamon sticks - 1/2 inch
  • Galda Chingri/big prawn - 4 pcs (300 gms)
  • Mustard oil - 3 tbsp
  • garam masala powder - 1/2 tsp
  • Salt to taste
  • Whole spices - bay leaf - 1
  • Sugar - 2 tsp
  • Coconut milk - 1 and 1/2 cup
  • yogurt - 1 tbsp
  • Ghee - 2 tbsp
  • Slited green chillies - 3 pcs
  • Onion paste - 2 tbsp
  • cardamoms - 3
  • Red chilli powder - 1/2 tsp
  • tomato paste - 2 tbsp
  • Ginger garlic paste - 1 tbsp
