Muri ghonto or Muro ghonto is a popular traditional Bengali fish head curry made with roasted rice and ssome veggies. This is generally made with Rohu/Katla fish heads. It is mildly spiced and the mushy gravy contrats with the slightly crispy rice and fish head pieces to impart a deklicate balance of flavours and texture. This is a dying dish in most Nengali households and we encourage you to try this out to not only tingle your taste-buds but to keep the heritage of traditional Bong cooking alive!
Ingredients:
- Garam masala powder - 1/4 th tsp
- Bay leaves - 2
- Mustard oil - 4-5 tbsp
- Slit green chillies - 3
- Gobindo bhog rice/Basmati rice - 1 cup
- Fish head (Rui/katla)- 1 medium size
- Chopped onion - 1 large onion
- Cumin seeds - 1/4 th tsp
- Ginger garlic paste - 1 tsp
- Ghee- 1/2 tsp
Whole garam masala:
- Kashmiri red chilli powder - 1 tsp
- cloves - 2-3
- cinamon stick - 1/2 inch
- Cumin powder - 1/2 tsp
- Turmeric powder - 1 tsp
- cardamoms - 2
- Salt as per taste
- Sugar - 1 tsp
