Lau Chingri is an eternal favorite in all Bengali households. Lau/Lauki/Bottle Gourd is a common veggie used across India. It is used in curries in isolation or in combos with other veggies, in dal or lrntil preparations and as an ingredient in non vegetarian dishes like this one. Bottle gourd or lauki is a watery vegetable and here it is cooked in a delicate spice mixture and mixed with sauteed shrimps. This makes for a lightly spiced and delicately flavored curry which goes exceedingly well with steamed rice. Try it and let us know how it went in the comments section below!
