Millionaire Shortbread a.k.a Caramel Shortbread - Delicious & Easy!!!

This is what you'll need:
Base:
- 50g - 1/4cup Sugar
- 125g - 1/2cup Butter/Margarine
- 175g - 1+1/3cup Self-raising flour
Caramel:
- 200g - 150ml Condensed milk
- 125g - 5/8cup Sugar
- 125g - 1/2 cup Butter
- 2 tbsp golden syrup
Topping:
- 180g - 6.5oz dark/milk chocolate
Method:
- Preheat the oven to 180°C/gas mark 4
- To make the base, mix the butter, sugar and flour until it forms a dough.
- Firmly press into the base of a 8 inch square tin.
- Bake for 15 minutes.
- Over a hob, mix the condensed milk, butter and sugar continuously. Do not stop mixing as it can easily stick to the pan. You are waiting for the mixture to burn to a light brown colour - around 5 minutes. Continue to stir after you take off the heat for a minute or so.
- Spread over the base. Leave to cool for at least 30 minutes.
- Melt the chocolate. Then pour it over the caramel. Leave to set for 3 hours minimum in the fridge before you cut into pieces.
NOTE: Using self raising flour, there will be some rise. You're looking for a small even rise NOT lumps on your base! If you use plain flour, be sure to prick the base as it's more likely to be lumpy.
