Lemon Glazed Inipit with Lemon Curd Filling

LEMON INIPIT:

Ingredients:

For the Lemon Curd:

  • 4 eggs
  • ⅓ cup lemon juice
  • 2 egg yolks
  • 1 stick (113g) cold butter
  • 1 cup sugar
  • ½ tbsp lemon zest

For the Lemon Glaze:

  • 2 tbsp lemon juice
  • ¾ cup icing sugar

For the Lemon Sponge:

  • 2 tsp baking powder
  • 1 ¼ cup cake flour
  • ½ tsp salt
  • Zest of one lemon
  • 5 egg yolks
  • ½ cup vegetable oil
  • 1 tsp vanilla
  • ½ cup sugar
  • ⅓ cup milk
  • 5 egg whites
  • ½ cup sugar
  • ½ tsp cream of tartar

*12x14 jelly roll pan

*Bake at 170C for 25 minutes
