LEMON INIPIT:
Ingredients:
For the Lemon Curd:
- 4 eggs
- ⅓ cup lemon juice
- 2 egg yolks
- 1 stick (113g) cold butter
- 1 cup sugar
- ½ tbsp lemon zest
For the Lemon Glaze:
- 2 tbsp lemon juice
- ¾ cup icing sugar
For the Lemon Sponge:
- 2 tsp baking powder
- 1 ¼ cup cake flour
- ½ tsp salt
- Zest of one lemon
- 5 egg yolks
- ½ cup vegetable oil
- 1 tsp vanilla
- ½ cup sugar
- ⅓ cup milk
- 5 egg whites
- ½ cup sugar
- ½ tsp cream of tartar
*12x14 jelly roll pan
*Bake at 170C for 25 minutes
