PEPPERMENT BARK:
- 2 teaspoons vegetable or coconut oil
- 1 cup crushed peppermint candy canes
- 1 (10 oz.) bag of 60% bittersweet Chocolate Chips, may use milk or semi-sweet Chocolate Chips
- 1 (11 oz.) bag White Chocolate Chips
- Line a 9" baking pan with tin foil. Set aside.
- Melt bittersweet chocolate chips with 1 teaspoon of oil over double boiled or microwave until chips are almost melted (DO NOT over heat chocolate). Chocolate will continue to melt while removed from heat. Pour into prepare baking pan. Cool in refrigerator for 20 minutes, or until firm.
- Melt white chocolate chips with 1 teaspoon of oil over a double boiler or microwave until chips are all most melted. Remove from heat. Stir until chocolate is smooth. Add 1/4 cup crushed candy cane. Stir. Pour peppermint white chocolate over firmed dark chocolate. Sprinkle remaining crushed peppermint over top.
- Chill in refrigerator for 20 minutes of until firm.
- Remove chocolate (using tin foil) from 9-inch pan. Full foil off chocolate. Using a knife, cut PEPPERMINT BART into bit size pieces or break with hands to give a rustic looks.
- Store in an airtight container. Refrigerate up to 3 weeks or before serving.
