Moist Carrot Cake with delicious cream cheese frosting!
Ingredients:
- ½ tsp all spice (sand brown)
- 1/2 tsp salt
- ¼ tsp clove (darkest one)
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 1/2 cups all purpose flour
- ½ tsp nutmeg (orange-brown)
- 1 tsp baking soda
- 3 eggs
- 1 tsp vanilla extract
- ¼ cup pineapple juice
- 2/3 cup vegetable oil
- ¾ cup sugar
- ½ cup crushed pineapple
- ¼ cup raisins
- 1 ½ cups grated carrots
- 1/2 cup chopped walnuts
Few things to take note:
*Baking pan used is 12x14x1
*Chill the cream cheese frosting until spreadable
*Set aside about 1/3 portion of the cream cheese frosting and use it to decorate each carrot cake slice
