VEGETARIAN CHOPPED SALAD
- 1/2 cup cooked corn, fresh off the cob or frozen
- 1 tablespoon cilantro (may substitute with parsley and/or basil), chopped
- 3-4 tablespoon extra virgin olive oil
- 1 avocado, chopped
- 1/2 cup cucumber, chopped
- 1/2 cup tomatoes (your choice), chopped
- salt & pepper for seasoning, optional
- 1/2 cup broccoli, chopped
- 2 tablespoon red onion, chopped
- 8-10 cups Romaine Lettuce, chopped, rinsed & stored in refrigerator until ready to use (may substitute with red/green leafy lettuce, iceberg, spinach, or kale) My favorite is Romaine.
- 1/2 cup red, yellow, or orange bell pepper, chopped
- 1-2 tablespoons fresh squeezed lemon juice
Add fresh ingredients to a large salad bowl. Drizzle olive oil over the top with the fresh lemon juice. Toss well. Season with salt & pepper to your liking!!
Serve immediately!!
TIPS: Salad maybe prepared in advance (without adding oil & lemon juice) by covering and storing in refrigerator up to 8 hours. Add oil, lemon juice, salt, and pepper before severing!!
