Veg Dum Biryani

QUANTITY GIVEN IS FOR 4 PEOPLE

Ingredients :

  • Oil – 2 cups
  • Kesar(Soaked in milk) – 2 tbs
  • Cardamom/Elichi powder – 1 tsp
  • Javantri/Mace Powder – 1 tsp
  • Cauliflower – 250 grams
  • Carrots – 2 medium
  • Mint leaves
  • Onions – 1 bowl (5-6 onions)
  • Green chillies - 2
  • Beans – 1 cup or 100 grams
  • Turmeric powder –3/4th tbs
  • Dry spices(Cardamom, Cinnamon, Dry red chilly and Clove ) – 1-2 piece
  • Jeera – 1 tbs
  • Kashmiri red chilly powder – 1 tbs
  • Salt – as per taste
  • Curd – 1 cup / 250 grams
  • Ginger garlic paste – 2 tbs
  • Basmati rice – 1.5 cup

Procedure:

  1. Soak 1.5 cup basmati rice for 30 minutes
  2. Take a bowl and add chopped cauliflower, carrots, beans, green chilly, curd, elichi/cardamom powder, javantri/mace powder, turmeric/haldi powder, salt, red chilly powder and mint leaves
  3. Mix everything well and keep it aside for 10-15 minutes
  4. Heat the oil and add onions and fry it till it becomes golden browm
  5. Remove the extra oil from onions and remove 1 spoon fried onion and keep it aside
  6. Add jeera and ginger garlic paste into the onions and mix everything well
  7. Add all the vegetables soaked in curd and mix well
  8. Let it cook for 15 minutes on low flame
  9. For rice
  10. Add dry spices into the boiling water
  11. Add rice into it and cook till rice is 75% ready
  12. Strain out extra water from rice and keep it aside
  13. Add the rice into all vegetables and spread it evenly
  14. For garnishing add more cardamom powder and fried onions
  15. Add onion oil, rice water(2 spoons), mint leaves, kesar and rose water
  16. Take a piece of cloth and cover the vessel with it and close the lid
  17. Make sure vessel is tightly closed
  18. Cook it for 20 minutes on low flame
  19. Veg DUM BIRYANI is ready to serve
