Veg Dum Biryani

QUANTITY GIVEN IS FOR 4 PEOPLE
Ingredients :
- Oil – 2 cups
- Kesar(Soaked in milk) – 2 tbs
- Cardamom/Elichi powder – 1 tsp
- Javantri/Mace Powder – 1 tsp
- Cauliflower – 250 grams
- Carrots – 2 medium
- Mint leaves
- Onions – 1 bowl (5-6 onions)
- Green chillies - 2
- Beans – 1 cup or 100 grams
- Turmeric powder –3/4th tbs
- Dry spices(Cardamom, Cinnamon, Dry red chilly and Clove ) – 1-2 piece
- Jeera – 1 tbs
- Kashmiri red chilly powder – 1 tbs
- Salt – as per taste
- Curd – 1 cup / 250 grams
- Ginger garlic paste – 2 tbs
- Basmati rice – 1.5 cup
Procedure:
- Soak 1.5 cup basmati rice for 30 minutes
- Take a bowl and add chopped cauliflower, carrots, beans, green chilly, curd, elichi/cardamom powder, javantri/mace powder, turmeric/haldi powder, salt, red chilly powder and mint leaves
- Mix everything well and keep it aside for 10-15 minutes
- Heat the oil and add onions and fry it till it becomes golden browm
- Remove the extra oil from onions and remove 1 spoon fried onion and keep it aside
- Add jeera and ginger garlic paste into the onions and mix everything well
- Add all the vegetables soaked in curd and mix well
- Let it cook for 15 minutes on low flame
- For rice
- Add dry spices into the boiling water
- Add rice into it and cook till rice is 75% ready
- Strain out extra water from rice and keep it aside
- Add the rice into all vegetables and spread it evenly
- For garnishing add more cardamom powder and fried onions
- Add onion oil, rice water(2 spoons), mint leaves, kesar and rose water
- Take a piece of cloth and cover the vessel with it and close the lid
- Make sure vessel is tightly closed
- Cook it for 20 minutes on low flame
- Veg DUM BIRYANI is ready to serve
