This is my favorite homemade PICO DE GALLO, also know as SALSA FRESCA in Mexican cuisine, I've ever made. Learn my secret by using the freshest tomatoes, onion and cilantro that make this salsa irresistible. Serve with fajitas, taco, grilled chicken or fish, bean soups, tortilla chips or just by itself. PICO DE GALLO

In a medium mixing bowl add....

  • 1 medium jalapeno, chopped with seeds and ribs removed for less heat
  • 1 cup cilantro, chopped
  • 1/2 teaspoon salsa, optional
  • juice from one fresh heavy lemon or lime
  • 1 cup tomatoes, chopped
  • 1 cup onion, chopped

Toss well in bowl. Serve immediately or cover and refrigerate for up to 8 hours.
