CLASSIC WALDORF SALAD:
- 1/2 cup walnuts, slightly toasted (substitute w/ pecans or almonds)
- 1-2 apples, red-skinned, sweet & crunchy
- 3 tablespoons mayonnaise (substitute w/ yogurt or sour cream)
- 1/2 cup celery, thinly sliced
- Fresh Lettuce
- 1 tablespoon fresh lemon juice
- 1/2 cup grapes, sliced in half (substitute w/ 1/4 cup raisins)
- 1/4 teaspoon kosher salt & fresh cracked black pepper
In a large mixing bowl add diced apples and toss with fresh lemon juice. Add celery, grapes, salt and pepper. Toss until well combine. Add mayonnaise. Toss until apple mixture is coated well.
Add nuts (right before serving) to WALDORF SALAD, toss well, and serve on a bed of lettuce.
Serves 4
TIPS: Store salad in airtight container in refrigerator up to 1 day.
