It's officially ASPARAGUS SEASON...from April until late June!! A perfectly roasted vegetable side dish for chicken, fish, steaks or just eat one spear at a time!! Click on "SHOW MORE" below on instructions for roasting....
ROASTED ASPARAGUS
Preheat oven to 425 degrees F.
- fresh ground pepper
- 2 tablespoons olive oil
- 1 fresh lemon
- 1 pound fresh asparagus spears
- dash of kosher salt
- Store ends of asparagus spears in fresh water until ready to use.
- Before roasting rinse asparagus under cool running tap water. Dry on paper towels to absorb all water.
- WIth sharp knife...remove 1 - 2 inches from end of each asparagus spear (remove any heavy scales with vegetable peeler or paring knife).
- Toss asparagus with olive oil, salt and pepper. Arrange asparagus in a single layer on large cookie sheet.
- Bake 15 minutes.
- Cool slightly and squeeze fresh lemon juice over asparagus.
