LEMON ICE BOX PIE

Preheat oven to 350 degrees F.

  • 1 can (14 oz) sweetened condensed milk
  • Whipped Cream & Lemon Wedges for garnish
  • 1 Tablespoon grated fresh lemon rind
  • 1 egg white beaten with 1 teaspoon water
  • 1/2 cup fresh lemon juice
  • 1 pkg. (8 oz) cream cheese, softened
  • 1 (9-inch) graham cracker pie crust
  1. Brush inside of graham cracker with beaten egg white mixture. Bake in preheat oven for 5 minutes. Cool completely.
  2. Beat cream cheese and sweetened condensed milk in a medium bowl with electric mixer until smooth.
  3. Add lemon juice and lemon rind; beat on low until smooth. Pour filling into prepared crust.
  4. Cover and refrigerate for 4 hour, but no longer than 8 hours.
  5. Serve with whipped cream and lemon wedges.
