LEMON POUND CAKE:

  • 1/2 teaspoons baking powder
  • 5 eggs
  • 3 cups sugar
  • 2 teaspoons pure vanilla
  • 1 tablespoon grated lemon rind
  • 3 1/3 cup cake flour
  • 1 cup buttermilk
  • 1 1/2 cup butter, softened

CAKE GLAZE:

  • 1/3 cup sugar
  • 1/4 cup fresh lemon juice
  1. Grease and flour one 10-inch tube pan or 2 loaf pans.
  2. Combine butter and 3 cups sugar and beat with mixer until fluffy. Add one egg at a time and beat until well combine. Add vanilla.
  3. In another bowl combine flour, baking powder and lemon rind until well combine. Slowly add flour to butter mixture alternating with buttermilk.
  4. Pour into prepared pan(s). Bake in a preheated 300 degree oven for 2 hours.
  5. Meanwhile, combine lemon juice and 1/3 cup sugar into a small skillet or pan. Bring to a boil on medium low heat and cook for 2 minutes. Remove from heat and cool.
  6. Add lemon glaze to the top of warm LEMON POUND CAKE.

TIPS: Store POUND CAKE in an airtight container up to 2 day or freeze up to 3 months.
