LEMON POUND CAKE:
- 1/2 teaspoons baking powder
- 5 eggs
- 3 cups sugar
- 2 teaspoons pure vanilla
- 1 tablespoon grated lemon rind
- 3 1/3 cup cake flour
- 1 cup buttermilk
- 1 1/2 cup butter, softened
CAKE GLAZE:
- 1/3 cup sugar
- 1/4 cup fresh lemon juice
- Grease and flour one 10-inch tube pan or 2 loaf pans.
- Combine butter and 3 cups sugar and beat with mixer until fluffy. Add one egg at a time and beat until well combine. Add vanilla.
- In another bowl combine flour, baking powder and lemon rind until well combine. Slowly add flour to butter mixture alternating with buttermilk.
- Pour into prepared pan(s). Bake in a preheated 300 degree oven for 2 hours.
- Meanwhile, combine lemon juice and 1/3 cup sugar into a small skillet or pan. Bring to a boil on medium low heat and cook for 2 minutes. Remove from heat and cool.
- Add lemon glaze to the top of warm LEMON POUND CAKE.
TIPS: Store POUND CAKE in an airtight container up to 2 day or freeze up to 3 months.
