~Make your own leveled up banana bread with this banana flan loaf recipe! Make it single serving in mamon molds or bigger in loaf pans. This recipe is also 'no oven' friendly. Make it by steaming or baking, both works perfectly for this recipe. Perfect flavor combination of banana cake and leche flan!~
Ingredients:
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 cup cornstarch
- 2 cups all purpose flour
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 cup vegetable oil
- 2 egg yolks (reserve egg whites)
- 1/2 cup light brown sugar
- 5 pcs medium sized, ripe bananas (lakatan)
Leche Flan:
- 1 can (300mL) condensed milk
- White sugar for caramelization
- 10 egg yolks (reserve 3 egg whites)
- 1 can (370mL) evaporated milk
Meringue:
- Combine reserved 3 plus two egg whites
- 1/4 tsp cream of tartar
- 1/4 cup sugar
Pans used:
- Mamon molds
- 7x3x2.5 loaf pans
