FRUIT JELLY CHEESECAKE | Vanilla Chiffon Cake with Cream Cheese Frosting

~Fruit Jelly Cheesecake inspired by Boone Bake, with layers of vanilla chiffon, filled with whipped cream cheese, fruit slices covered with more fruits and lemon infused jelly~
Ingredients:
CHIFFON CAKE:
- 1 ¼ cake flour
- 2 tsp baking powder
- ½ cup sugar
- ½ tsp salt
- 5 egg yolks
- 1 tsp vanilla
- ½ cup vegetable oil
- ⅓ cup milk
- ½ tsp cream of tartar
- ⅓ cup sugar
- 5 egg whites
*Bake in two 6-inch round pans for 25-30 minutes at 160C
FILLING AND FROSTING:
- 1 cup whipping cream (I used everwhip)
- ¼ cup sugar
- Strawberry slices
- 1 tsp vanilla
- Kiwi slices
- 225g cream cheese, softened
- Mango slices
ASSORTED FRUITS (any fresh fruit of choice):
- Dragon fruit
- Orange
- Grapes
- Kiwi
- Strawberries
JELLY:
- ¾ cup sugar
- 1 pack (25g) white gulaman, unflavored
- 5 cups water (you can use 3 1/2 cups of water or just add half more pack of gulaman so it would be more firm)
- Juice of one lemon
