Stik-O Checkerboard Birthday Cake

~Chocolate cake and Vanilla cake filled and covered with chocolate ganache topped with Flat Tops Chocolates and Stik-O Border~
Ingredients:
Chocolate Ganache:
- 500g dark compound chocolate
- 250mL all purpose cream
Simple Syrup:
- 1/2 cup white sugar
- 1/2 cup water
*Boil them together until sugar is dissolved and cool completely
Vanilla Cake Recipe:
- 2 tsp vanilla
- 1 cup (225g) unsalted butter, softened
- 4 eggs
- 1/2 cup sugar
- 2 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- Cream together butter and sugar. Add the eggs one at a time and the vanilla
- Sift together the dry ingredients. Add one third portion to the butter-sugar mixture and mix. Add half of the milk and mix again
- Repeat until all ingredients are well incorporated. Avoid overmixing
- Pour over two 8-inch round pans
lined with parchment and bake in a preheated oven at 180C for 25-30 minutes and cool completely
