Ingredients:
- 1 x 250g pkt plain sweet biscuits
- 2 tsp finely grated lemon rind
- 125g unsalted butter, melted
- 120g fresh or frozen raspberries
- 1 x 300ml ctn sour cream
- 215g (1 cup) caster sugar
- 2 tbs plain flour
- 4 eggs
- 750g cream cheese, at room temperature
- 1/2 tsp vanilla extract
