HUMMINGBIRD CAKE

Preheat oven to 350 degrees F.

Grease & flour 3-9" round cake pan or 1- 9" by 13" baking pan. Set aside.

  • 1 (8 oz.) can crush pineapples with juice
  • 1 teaspoon baking powder
  • 2 cups sugar
  • 1-1/4 cups vegetable oil
  • 1 teaspoon ground cinnamon
  • 3 eggs, well beaten
  • 1 cup pecans, chopped
  • 2 cups all-purpose flour
  • 2 cups bananas (use very ripened bananas, about 4 large bananas), mashed
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  1. In a medium bowl; add flour, sugar, baking powder, and salt. Whisk. Add pecans and toss until nuts a well coated. Set aside.
  2. In a large bowl; add eggs, oil, vanilla, crushed pineapples, and mashed bananas. Mix well with whisk.
  3. Add flour mixture to banana mixture. Stir with spoon until well blended.
  4. Divide cake batter equally into the prepared cake pans. Approximately three (3) cups of batter in each round cake pan.
  5. Bake in preheated oven for 25-30 minutes, or 45-50 minutes if using a 9" by 13" baking pan. Test with toothpick for doneness.
  6. Cool cakes in pans for five (5) minutes, before inverting onto cooling rack. Cool cakes completely before adding CREAM CHEESE FROSTING.

CREAM CHEESE FROSTING:

  • 1 (8-oz.) package of cream cheese at room temperature
  • 1 teaspoon pure vanilla extract
  • 6 cup powdered sugar
  • 1/2 cup butter at room temperature
  1. With hand mixer; beat cream cheese, vanilla, and butter together until creamy.
  2. Add one (1) cup of powdered sugar, at a time, until well blended. If frosting is too thick add 1/2 teaspoon of milk or cream until desired consistency.
  3. Frost the first two layers of cake with 1/2 cup of cream cheese frosting. Spread frosting evenly to the edge of cake rounds. Frosting the sides of cake. Last, frost the top of cake.
  4. Chill cake in refrigerator for one (1) hour before serving.

TIPS: Store cake in an airtight container up to 3 day in refrigerator.
