Carrot Cake - Easy
This is a lovely moist carrot cake which contains no butter and will keep for several days without drying out. Its an easy cake to make and the result is amazing!
For this cake recipe you will need:
- 4 carrots
- Cinnamon- to taste - I recommend 2 teaspoons
- 150g/5oz white sugar
- 50g or a handful or walnuts - chopped.
- Nutmeg - to taste - I recommend 1 teaspoon
- 200ml/7fl oz vegetable oil
- 3 eggs
- 200g/7oz plain flour and baking powder & bicarb / self raising flour
For the cream cheese frosting:
- 100g butter
- 200g icing sugar
- 200g cream cheese such as Philadelphia
Tips: Only use fresh carrots, always wash and peel before grating, use an oil with very little taste, you can switch the nuts for saltarnas if you prefer, Only use room temperature cream cheese and butter or you risk curdling the mixture & if you want a thicker frosting, add another 150g of icing sugar.
