Christmas is around the corner and this is the best time to prepare a traditional Christmas fruit cake. At Hungry Tummy, the focus is on the use of homely cooking utensils and ingredients. Hence, I have desisted from using fancy moulds and cake/microwave ovens and used the humble pressure cooker and an aluminium bowl for baking. The cake comes out soft, fluffy and firm- flavoured with dry fruits. The balanced sweetness of the dough compliments the flavours of the dry fruits which creates the perfect Christmas cake. - Chopped petha - 1/4 th cup
- Sugar - 1 cup
- Chopped almonds - 1/4 th cup
- Vanilla essence - 1 tsp
- Melted Butter - 1/2 cup
- chopped cherry - 1/4 th cup
- Chopped raisins - 1/4 th cup
- Maida/all purpose flour - 1.5 cups
- Milk - 1/4 th cup
- Chopped Cashew nuts - 1/4 th cup
- Egg - 3
- Vegetable oil - 1/2 cup
- Pinch of salt
- Baking powder - 1/2 tsp
