EASTER BUNNY CAKE:

  • 1/4 teaspoon salt, if using unsalted butter, optional
  • 1 cup (2 regular sticks) salted butter, at room temperature
  • 1 box of your favorite cake, bake 2 (8-inch) round cakes according to box directions. Cool completely before frosting. Set aside.
  • 3-4 cups sweetened shredded coconut, optional
  • 1 teaspoon pure vanilla extract
  • 1 cup white or chocolate chips, melt according to package direction when ready to make the BUNNY EARS.
  • 3-1/2 to 4 cups powdered sugar
  • 2 (8-ounce) boxes of cream cheese, at room temperature
  • CREAM CHEESE FROSTING
  1. Cream together the cream cheese, butter, and vanilla (add salt at this time) with electric mixture, on medium-high, for 3-5 minutes, or until ingredients are creamy.
  2. Add 1 cup (at a a time) of powdered sugar with an electric mixer (on low) until all powdered sugar is blended into the cream mixture. Mix on HIGH until light & creamy. Cover. Set aside (up to 1 hour or until ready to use). Refrigerate frosting if not using within 1 hour.
