Coconut & Berry Cake- Simple and Delicious

This is a lovely coconut and berry cake. Simple and delicious, its packed with strawberries, blueberries and apple with lime juice and zest and plenty of desiccated coconut.
- 2/3 limes for zest and juice
- Around 280g-300g grams (2 cups) berries such as blueberries and strawberries
- 1 3/4 cups *225g*self raising flour (or all purpose/plain with 2 teaspoons baking powder
- 1 cup *75g*packed shredded coconut
- 3/4 cup *180ml or 6fl oz*buttermilk
- 1/2 teaspoon salt
- 1 cup plus generous 1 tablespoon *220g* sugar
- 3/4 cup *170g* unsalted butter or margarine
- 3 large eggs or 4 medium eggs
(I used 40g Breaburn apple, 140g strawberries, 100g blueberries)
The method is simple:
- Mix salt, coconut and flour in a bowl and set to one side
- Mix the butter and sugar together until fluffy
- Add the eggs one at a time until incorporated
- Add the zest of the limes plus the juice of one lime
- Add the flour mixture alternating with the buttermilk and fold in
- Add a few tables spoons of flour and sugar to the prepared fruit and toss until all the fruit is coated
- Place cake batter in a lined tin and scatter the fruit over the top evenly
- Bake in a pre-heated oven - 180 or 160 fan - Gas mark 4 for 40-50 minutes
- Remove from the oven and leave to cool in the tin for 10 -15 mins before allowing to cool on the side
- Sift some icing sugar over the top to decorate
This cake will keep for at least 3 days in an air tight container or wrapped in cling film. No need to refrigerate this cake.
