CHCOCLATE MOLTEN LAVA CAKE
4 - 8 oz (1 cup) ramekins, buttered and floured, place on cookie sheet. Set aside.
Preheat oven to 450 degrees F.
- 1/2 cup (1 stick) butter, cubed
- 1/4 cup all-purpose flour
- 1/2 cup pure vanilla
- pinch of salt
- 4 ounces (1/2 cup) semi-sweet chocolate, chopped
- 2 egg yokes
- 1 cup powdered sugar
- 2 whole egg
- In a double-boiler, over medium-heat, melt together butter and chocolate. Stir well.
- In a medium mixing bowl whisk together eggs, vanilla, salt. Add powder sugar and flour. Using a hand mixer beat ingredients for 4 minutes. Slowly add butter & chocolate. Beat until well mixed.
- Add chocolate mixture to prepared ramekins. Fill 3/4 full.
- Bake in preheated oven for 12-14 minutes.
- Cool cakes in ramekins for 5 minutes before transferring to serving dish. Serve with a raspberries, whipped cream, ice cream or a dusting of powdered sugar, optional.
