Ripe Bananas - this is how to use them up in a completely yummy way!
This loaf cake tastes amazing!
It is very easy and gives great results. It can be made with or without a stand mixer and you can bake this in a round/square cake tin. Remember, if you use a large tin for a shallow cake - it will cook sooner. You'll need to check the cake at around the 30/40 minute mark for a shallow cake.
To make my version, this is what you'll need:
- 50 grams sultanas
- 225 grams brown sugar
- 2-4 tablespoons flaked almonds
- 2 lemon zest
- 2 medium eggs
- 300 grams self raising flour
- 100 grams butter (or margarine)
- ¼ teaspoon salt
- 2 tablespoons rum
- 300-400 grams bananas (overipe - mashed) - 4 medium
