7UP POUND CAKE made the old-fashioned way!! Moist on the inside, yet a slightly buttery crunch on the outside drizzled with a fresh lemon glaze. Recipe below...
7 UP POUND CAKE
Preheat oven to 350 degrees F.
Lightly grease and flour a 10-inch Bundt or Tube pan. Set aside.
- 3/4 cup 7UP soda
- 1/4 teaspoon salt
- 1/2 teaspoon pure lemon extra
- 1-1/2 cups butter, softened
- 3 cups sugar
- 3 cups all-purpose flour
- 5 large eggs or 6 medium eggs
- 1 teaspoon pure vanilla extra
GLAZE:
- 1-2 tablespoons 7UP soda
- 1-2 teaspoons of fresh lemon juice
- 1-1/2 cup powdered sugar
- In a large bowl add butter and sugar. Beat with a hand mixer, or kitchen aid until fluffy. Add eggs, one at a time, beat until you can no longer see the yoke and egg whites.
- Add vanilla and lemon extras. Beat well.
- Add flour and salt alternating with 7UP, beating well after each addition and can no longer see the flour and 7UP.
- Add cake batter into prepared baking pan. Bake for 1 hour and 15-20 minutes. Bake until a toothpick inserted in cake come out clean .
- Cool in pan for 20 minutes before removing to wire rack to cool completely.
- For glaze, whisk together powdered sugar, lemon juice, and 7UP until desired consistency. Drizzle over warm or cool cake.
