SOOJI GOLGAPPA | PANIPURI | PUCHKA

Step by step recipe of popular Indian Street Food - Golgappa, also known as Panipuri or Puchka. I have also prepared potato stuffing and a spicy water mix that goes with golgappas.

Ingredients:

For puris:

  • Sooji/Semolina 2 cups
  • Salt to taste or 1 pinch
  • Maida / All purpose flour - 1 tablespoon
  • Lukewarm water - 250 ml / 1 cup

For potatoes filling:

  • Roasted Cumin Powder - 1/2 tsp
  • Red Chilli Powder - 1/2 tsp
  • Dry Mango Powder - 1/2 tsp
  • Regular salt - to taste
  • Rock Salt - 1/2 tsp
  • 2 medium size potatoes (boiled and peeled)
  • Kala chana - 1/4 cup

For Pani:

  • Few Ice Cubes
  • dry Mango Powder - 1/2 tsp
  • Lemon - 1/2 piece
  • Mint Leaves - 1 bunch
  • Imli water - 1/4 cup
  • Coriander leaves - 1/2 bunch
  • Water - 2-3 cups
  • Water - 250 ml
  • Peeled Ginger - 1" long
  • Roasted Cumin Powder - 1/2 tsp
  • Raita Boondi - 1/4 cup
  • Green Chilli - 2
  • Chaat Masala - 1 tsp
  • Black Pepper powder - 1/3 tsp
